Chocolate Pudding (1 serving)
3 tbsp chia seeds
125ml nut milk of choice (hazelnut/cashew/almond/rice/coconut)
1.5 tbsp maple syrup/honey
1 tbsp cacao powder
Pinch of cinnamon
How to make
Stir the chia seeds in the milk and mix well for 1 minute.
Add the maple syrup, cinnamon and cacao powder. Stir well.
Store in a sealed container in the fridge overnight.
Top with frozen raspberries and banana slices.
Serve as breakfast, dessert or a healthy treat.
Cranberry Cookies
1 banana
2 tbsp chia seeds
125g peanut butter
2 tbsp cacao powder
¼ tsp baking soda
Pinch of sea salt
2 tbsp oats
1 tbsp honey/maple syrup
100g cranberries
3 squares dark chocolate
How to make
Preheat oven to 250C.
Line a baking sheet.
Mash the banana in a bowl. Add the chia seeds, oats, honey, peanut butter, cacao powder, baking soda and salt. Stir well.
Add in the cranberries.
Break up the dark chocolate into small pieces and add it to the mixture.
Using wet hands, roll the mixture into 8-10 flat balls.
Bake for about 12-15 minutes.
Christmassy Granola
400g oats
100g pecan nuts
50g coconut flakes
100g coconut oil
3 tbsp maple syrup/honey
2 tsp cinnamon
½ tsp nutmeg
2 tsp ground ginger
Pinch of salt
70g dried apricots
How to make
Preheat oven to 170C
Melt the coconut oil and maple syrup in a pan over medium heat.
In a bowl, mix the oats, coconut flakes, pecans and spices.
Combine the two mixtures together.
Spread the granola onto a lined baking tray.
Bake for approx. 35 minutes, stirring every 10 minutes.
Cool the granola completely.
Chop the apricots and stir them into the cooled granola.
Store in an airtight jar or sealed bag.
